Recipe for

Clarify stock or broth with egg whites

Ingredients

  • 4 egg whites
  • 2 tbsp water
  • Stock or broth of choice

Steps

  1. Mix (don't whisk, yet) egg whites with water
  2. Pour egg white mix into cold stock (or broth)
  3. Gently reheat the now eggy stock
  4. Once egg whites have congealed and cooked turn the heat off and strain the stock

Tips

  • You will most likely need to strain the liquid through a cheesecloth or coffee filter
  • You can clarify most impurities out the liquid with a coffee filter alone, tbh, but you wont get that consommé style clarity
  • THIS WILL TAKE SOME FLAVOUR AWAY so only do it if you want to be a fancy little bitch
